PHILOSOPHY
At the heart of our work lies the philosophy of Fabrizio, a vigneron, reflected in every bottle we produce: to interpret the tradition and the distinctive character of our land at its finest, while respecting the territory and the fruit it gives us.
We firmly believe that great wines can only come from great grapes, and that great grapes are the result of meticulous, almost obsessive care in the vineyard.
The pursuit of biodiversity in our parcels, cultivated under organic practices, together with deep respect for the climatic conditions of each vintage, is essential to guide the fruit toward perfect ripeness. Then comes the harvest the most intense and decisive moment of the year when the tension and responsibility of an entire season’s work come together.
The grapes are harvested strictly by hand, gently placed in small crates and cooled in refrigerated cells to preserve freshness and integrity. After cooling, the second phase begins: a rigorous selection on two sorting tables, followed by destemming using equipment designed to keep the berries perfectly intact, bright and compact almost like caviar, ready to begin alcoholic fermentation.
Every step of this process has a single purpose: to vinify flawless grapes and create wines of elegance and complexity, true expressions of the terroir and of the passion that drives us.
