PHILOSOPHY

I define myself as a winemaker with a clear philosophy, which I express in the bottles I produce: to best interpret the tradition and characteristics of my land, respecting the territory and the fruit it generates. I am convinced that to produce great wines you need great grapes, and these are obtained only with obsessive care of the vineyards.

 

The search for biodiversity in the plots, grown organically, and respect for the climatic conditions of each year are essential to accompany the fruit to perfect ripening. Then comes the harvest, a crucial moment in which every winemaker experiences the tension and responsibility of a whole year of work.

 

In the first phase, the grapes are harvested strictly by hand, placed in small crates and stored in cold storage. After cooling, the second phase begins: a careful selection on two sorting tables, followed by destemming with machinery that keeps the grapes perfectly intact, ready to start the alcoholic fermentation.

 

Each step of this process has a single purpose: to vinify perfect grapes to create elegant and complex wines that are an authentic expression of the territory and the passion that drives them.
